Peel and segment citrus and combine in a big bowl.
In a small saucepan, add maple syrup, knob of ginger and about 1/2 tbsp water and heat over low and let the ginger steep for about 10-15 minutes. Remove from heat and cool.
Once cool, take out the ginger knob and squeeze in lime juice , stir to combine.
Pour maple syrup mixture over the citrus and stir to combine.
Add chopped mint and pomegranate kernels and serve!
