Preheat oven to 400 degrees
Place a piece of parchment paper on a baking sheet and roll out dough to about 1/8 in thick.
In a large bowl combine apples, sugar, cornstarch, lemon juice, cinnamon, nutmeg and salt. Toss together to mix.
Pour apple mixture onto the pie dough leaving about 2 inches around the edge. Fold over the edges overlapping the crust.
Brush the crust with the beaten egg.
Bake at 400 for about 40-50 minutes or until the crust is golden brown.
Top with your favorite toppings, I used pomegranate seeds and whipped cream.
