In a food processor, process dates until a sticky paste forms.
Add peanut butter and a pinch of salt and process until combined.
Freeze mixture for about 10 minutes (makes them easier to roll).
Line a plate with parchment paper, scoop about 1/2 TBSP into your hand and roll into a ball. Wet your hands with water to prevent from sticking.
Freeze balls for about 20 minutes to firm up.
Melt chocolate chips over a double boiler on your stove top or in the microwave. Microwave chocolate chips for 30 seconds and then stir, then in 10 second increments until fully melted, stirring in between.
Stick a tooth pick into a ball and dip in the melted chocolate until coated and immediately sprinkle with flaky sea salt.
Freeze balls one more time for 20 minutes until chocolate is set.
Store in the freezer
