Rainbow Veggie Spring Rolls

Ingredients
  

For the peanut dipping sauce:

  • 3 Tbsp Peanut Butter Creamy
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Sriracha
  • 2 Tsp Soy Sauce or Tamari
  • 1 Tsp Garlic Minced
  • 1 Clove Garlic Minced
  • 1/2 Tsp Red Pepper Flakes
  • 2 Tbsp Warm Water

For the Spring Rolls:

  • 1 Each Red Bell Pepper Sliced
  • 1 Each Yellow Bell Pepper Sliced
  • 1 Each Carrot Sliced
  • 1 Each Cucumber Sliced
  • 1 Each Avocado Sliced
  • 1 Each Purple Cabbage Sliced
  • 1 Bunch Cilantro Chopped
  • 1 Bunch Mint Chopped

Instructions
 

Peanut Dipping Sauce Instructions:

  • Whisk all topping ingredients together in a small bowl.
  • Garnish with chopped peanuts or sesame seeds and getting dipping!

Spring Rolls:

  • Follow the instructions on the rice paper sheets
  • Wrap up your favorite combo of veggies and herbs.
