Mediterranean Quinoa Salad

Servings 4 5 Oz Servings

Ingredients
  

  • 1 Cup Quinoa
  • 1 Can Chickpeas
  • 1 Cup Cherry Tomatoes Halved
  • 1 Each Red Bell Pepper Diced
  • 1 Each Yellow Bell Pepper Diced
  • 1/2 Each Red Onion Diced
  • 1 Cup Cucumber Seeded and Chopped
  • 1/2 Cup Kalamata Olives Sliced
  • 1/4 Cup Fresh Parsley Chopped

Dressing:

  • 1 Tsp Lemon Zest Grated
  • 1/4 Cup Lemon Juice Freshly Squeezed
  • 1 Each Garlic Clove Minced
  • 1 Tsp Dijon Mustard
  • 3 Tbsp Olive Oil
  • 1 Each Salt & Pepper To Taste

Instructions
 

  • Cook quinoa according to package instructions.
  • Set aside to cool.
  • In a large bowl, combine, quinoa, chicken, tomato, red and yellow bell peppers, cucumbers, olives, and parsley and toss all together.
  • In a small bowl, whisk together lemon zest, lemon juice, garlic, dijon, salt and pepper. While you are whisking, slowly pour in olive oil.
  • Pour dressing over quinoa mixture and toss to combine.

Notes

Store in fridge for up to 3 days.
