Instructions
Cook quinoa according to package instructions.
Set aside to cool.
In a large bowl, combine, quinoa, chicken, tomato, red and yellow bell peppers, cucumbers, olives, and parsley and toss all together.
In a small bowl, whisk together lemon zest, lemon juice, garlic, dijon, salt and pepper. While you are whisking, slowly pour in olive oil.
Pour dressing over quinoa mixture and toss to combine.

Store in fridge for up to 3 days.
