Holiday Antioxidant Chocolate Bark
This combo not only looks festive but has a sweet and salty crunch that is full of fiber, vitamins, minerals and tons of ANTIOXIDANTS!
- 8 Oz Dark Chocolate 70% (about 2 bars)
- 1/3 Cup Pomegranate kernels (about 1/2 a pomegranate)
- 1/3 Cup Raw unshelled pistachios
- 1/2 Tsp Flaky sea salt (I like Maldon’s)
Break or chop chocolate into small pieces and place in a heat-proof bowl.
Add about 1 cup water to a small saucepan and bring to a simmer. Place the bowl on top of the sauce pan to make a double boiler and stir chocolate until melted.
Meanwhile, heat a small pan over medium-high heat and toast pistachios for about 3-5 minutes.
Spread the melted chocolate onto a parchment paper lined baking sheet.
Sprinkle the pomegranate seeds, toasted pistachios and salt over evenly.
Place sheet pan into the fridge for about 1 hour until the chocolate is set. Then break apart into smaller pieces and serve.
