Remove fava beans from their pods
Bring a large pot of salted water to a boil and cook fava beans for about 2-3 minutes.
Drain the beans and immediately plunge into ice water to stop the cooking process.
Peel skin off each pod.
In a small bowl, whisk together the olive oil, lemon juice, garlic, parley, lemon zest, salt and pepper.
Pour dressing over the beans, garnish with cheese and enjoy immediately!
