Blender Breakfast Muffins
These muffins make it easy and I feel good that I’m loading the kids up with quality nutrients before they head off to school. One blender, one muffin tin, and a few simple ingredients.

- 2 Ripe Bananas
- 1 Egg
- ¾ C Old Fashioned Rolled Oats
- ½ C Almond Butter
- ¼ C Ground Flaxseed
- 2 Tbs Maple Syrup
- ¼ Tsp Baking Soda
- ¼ Tsp Salt
- ¼ C Mini Chocolate Chips I like 'Enjoy Life' mini chips
Combine all ingredients except chocolate chips in a blender and process until smooth.
Stir in chocolate chips (keep a spoonful to sprinkle on top).
Pour into 8 lined muffin tins and bake at 350 for 25 minutes.
