Rolos with a Peanut Butter Twist
My most popular (and my favorite) recipe! 4 simple ingredients for these little bites that taste just like a Rolo with a hint of Reese’s, so damn good. These keep perfectly in the freezer for when you are craving a guilt-free sweet treat!

Rolos with a Peanut Butter Twist
Ingredients
- 1 Cup Medjool Dates pitted
- 2 Tsp Peanut Butter or other nut butter
- 1/2 Cup Dark Chocolate Chips
- 1 Pinch Salt
- 1 Sprinkle Flaky Sea Salt Optional for garnish
Instructions
- In a food processor, process dates until a sticky paste forms.
- Add peanut butter and a pinch of salt and process until combined.
- Freeze mixture for about 10 minutes (makes them easier to roll).
- Line a plate with parchment paper, scoop about 1/2 TBSP into your hand and roll into a ball. Wet your hands with water to prevent from sticking.
- Freeze balls for about 20 minutes to firm up.
- Melt chocolate chips over a double boiler on your stove top or in the microwave. Microwave chocolate chips for 30 seconds and then stir, then in 10 second increments until fully melted, stirring in between.
- Stick a tooth pick into a ball and dip in the melted chocolate until coated and immediately sprinkle with flaky sea salt.
- Freeze balls one more time for 20 minutes until chocolate is set.
- Store in the freezer
