Pumpkin Chia Seed Pudding
The perfect make-ahead sweet, simple, healthy fall dessert. I topped my with chopped pecans and pomegranate seeds for an extra crunch and pop of seasonal flavors.

Pumpkin Chia Seed Pudding
Ingredients
- 2 Cups Coconut milk (or milk of choice)
- 1 Cup Pumpkin Puree
- 3 Tbsp Maple syrup
- 1/2 Cup Chia seeds
- 1 Pinch Salt
Instructions
- Combine all ingredients in a bowl and mix well.
- Cover and refrigerate overnight or at least 4 hours.
