Fava Beans with Lemon Garlic Dressing
I seriously look forward to this all year. If you have every had fresh fava beans you know what I’m talking about!
I highly recommend them for your spring garden, they grow like a weed, produce a ton and require little attention. This recipe truly highlights the fava beans and is perfect as an appetizer or side dish. Just make sure you use FRESH fava beans, otherwise they could be dry and starchy.
I recommend recruiting a buddy to help you remove the beans from the pods and peel the skins off, it can be a bit tedious. A small child works perfectly

Fava Beans with Lemon Garlic Dressing
Ingredients
- 1 Bunch Fava Beans Large bunch, about 3lbs
- 2 Tbsp Olive Oil
- 1 Tbsp Lemon Juice
- 1 Clove Garlic Minced or Pressed
- 1 Tbsp Fresh Parsley Chopped
- 1 Tsp Lemon Zest
- 1 Each Salt and Pepper To taste
- 1 Each Parmesean or Pecorino Shaved, for garnish
Instructions
- Remove fava beans from their pods
- Bring a large pot of salted water to a boil and cook fava beans for about 2-3 minutes.
- Drain the beans and immediately plunge into ice water to stop the cooking process.
- Peel skin off each pod.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, parley, lemon zest, salt and pepper.
- Pour dressing over the beans, garnish with cheese and enjoy immediately!
