Jicama “Churros”
June is when our big fair kicks off here in San Diego and I always start craving churros. When I was 14 I worked at the fair in the taffy booth and loved grabbing a churro on my lunch break. Crunchy jicama is delicious paired with cinnamon and maple syrup and makes a healthy alternative to a deep fried churro. Jicama is naturally low in calories and is a great source inulin, a prebiotic fiber that supports gut health!

Jicama “Churros”
Ingredients
- 1 Each Medium jicama peeled and sliced into 1/2 inch sticks
- 1 Tbsp Coconut oil melted
- 1 Tbsp Maple syrup
- 2 Tsp Cinnamon
- 1 Tsp Granulated sugar optional
Instructions
- Preheat your oven to 400 degrees
- In a large bowl, toss all ingredients, except the granulated sugar, together until the jicama is well coated
- Spread on a baking sheet and bake 15-20 minutes until crispy, tossing half way.
- Top with a sprinkle of granulated sugar and enjoy!
