Mediterranean Quinoa Salad
A plant based meal full of vibrant colors, textures, protein and fiber. Perfect to make ahead for a packed lunch or pot luck.

Mediterranean Quinoa Salad
Ingredients
- 1 Cup Quinoa
- 1 Can Chickpeas
- 1 Cup Cherry Tomatoes Halved
- 1 Each Red Bell Pepper Diced
- 1 Each Yellow Bell Pepper Diced
- 1/2 Each Red Onion Diced
- 1 Cup Cucumber Seeded and Chopped
- 1/2 Cup Kalamata Olives Sliced
- 1/4 Cup Fresh Parsley Chopped
Dressing:
- 1 Tsp Lemon Zest Grated
- 1/4 Cup Lemon Juice Freshly Squeezed
- 1 Each Garlic Clove Minced
- 1 Tsp Dijon Mustard
- 3 Tbsp Olive Oil
- 1 Each Salt & Pepper To Taste
Instructions
- Cook quinoa according to package instructions.
- Set aside to cool.
- In a large bowl, combine, quinoa, chicken, tomato, red and yellow bell peppers, cucumbers, olives, and parsley and toss all together.
- In a small bowl, whisk together lemon zest, lemon juice, garlic, dijon, salt and pepper. While you are whisking, slowly pour in olive oil.
- Pour dressing over quinoa mixture and toss to combine.
