Winter Citrus Salad

A variety of citrus fruits makes a colorful, sweet and sour salad that is refreshing as a light dessert after a hearty winter meal. I love the sour bites of grapefruit, the bright red from the blood oranges and just a hint of ginger. I served this to my family on Christmas after a heavy dinner and it was a welcomed change from a typical rich dessert. Embrace the winter produce that’s in season with this simple delicious citrus salad!

Winter Citrus Salad

Ingredients
  

  • 2 Each Blood Oranges
  • 2 Each Navel Oranges
  • 2 Each Cara Cara Oranges
  • 2 Each Grapefruits
  • 1/2 Cup Pomegranate Kernels
  • 1/2 Cup Mint Chopped + Sprigs for Garnish
  • 2 Tbsp Maple Syrup
  • 1 Piece Ginger 1" piece
  • 1 Each Juice from 1 lime

Instructions
 

  • Peel and segment citrus and combine in a big bowl.  
  • In a small saucepan, add maple syrup, knob of ginger and about 1/2 tbsp water and heat over low and let the ginger steep for about 10-15 minutes. Remove from heat and cool. 
  • Once cool, take out the ginger knob and squeeze in lime juice , stir to combine.
  • Pour maple syrup mixture over the citrus and stir to combine.
  • Add chopped mint and pomegranate kernels and serve!
