Blender Breakfast Muffins
The best eat-on-the-go breakfast for the kiddos (and you)!
Mornings are tough. We are always running late to school because of missing water bottles, can’t find socks, or gum stuck in hair (that was yesterday morning 🙄) These muffins make it easy and I feel good that I’m loading the kids up with quality nutrients before they head off to school. One blender, one muffin tin, and a few simple ingredients. Throw in some mini chocolate chips and they’ll gobble them up. Great as a quick breakfast or snack on the go. Each muffin is about 235 calories, 7g protein and 4.5g fiber.

RECIPE
Blender Breakfast Muffins
These muffins make it easy and I feel good that I’m loading the kids up with quality nutrients before they head off to school. One blender, one muffin tin, and a few simple ingredients.
Ingredients
- 2 Ripe Bananas
- 1 Egg
- ¾ C Old Fashioned Rolled Oats
- ½ C Almond Butter
- ¼ C Ground Flaxseed
- 2 Tbs Maple Syrup
- ¼ Tsp Baking Soda
- ¼ Tsp Salt
- ¼ C Mini Chocolate Chips I like 'Enjoy Life' mini chips
Instructions
- Combine all ingredients except chocolate chips in a blender and process until smooth.
- Stir in chocolate chips (keep a spoonful to sprinkle on top).
- Pour into 8 lined muffin tins and bake at 350 for 25 minutes.
