Summer Berry Chia Seed Pudding
When your old berries are soft and mushy, don’t throw them away!
If you are anything like me, a box of berries always gets lost in the back of the fridge. I’ll try and sneak them into my kids meals but they very careful pick out the “mushy” berries and put them to the side. You can always use them up in a smoothie but I like to drop them in a blender and mix into a purée to layer into a chia seed pudding. Not only does it look stunning but it makes a high protein, fiber, omega 3, and antioxidant filled breakfast, snack or dessert!

Recipe: Summer Berry Chia Seed Pudding
1 cup plain Greek yogurt
1 cup milk of choice (I like coconut)
1/2 cup chia seeds
3 Tbsp maple syrup or honey
1 tsp vanilla
Pinch of salt
Combine all ingredients in a bowl, mix well.
Fruit layer:
1- 2 cups mixed berries (frozen ones work too!)
Process in a high-speed blender or food processor until smooth.
In a 12 – 16oz glass jar or cup, pour 1/4 cup of the berry puree in the bottom and top with 3/4 cup of the chia mixture. Cover with plastic wrap and pop in the fridge overnight or a minimum of 2 hours.
Makes about 4 servings.
