Fave Fava Beans
These delicate and creamy beans are one of my favorite springtime offerings. You may have passed them over at the farmers market or grocery store because you don’t know what to do with them but let me tell you, it’s dead easy and absolutely worth it!

Recipe: Fava Bean Salad
Ingredients:
4 lbs fresh fava beans*
3 Tbsp olive oil
2 Tbsp fresh lemon juice
1 garlic clove minced
1 tbsp fresh parsley, chopped
1/2 tsp lemon zest
Salt and pepper to taste
1/2 cup Shaved Parmesan or pecorino for garnish
*Make sure they are fresh picked, otherwise they could be dry and starchy. When you peel the bean after cooking, it should be a bright vibrant green not pale and yellow*
- Remove beans from their pod
- Bring a pot of salted water to a boil and cook fava beans for 2-3 minutes
- Drain beans and rinse with cold water to stop the cooking process
- When cool, peel the skin off each bean (they should be a bright green color, discard if not)
- Whisk together oil, lemon, zest, garlic salt and pepper for the dressing and pour over the beans.
- Garnish with the parsley and cheese
