Plant Diversity Challenge
Challenge: Next time you are at the grocery store pick out a fruit or vegetable you have never tried before or only find in peak season.
Many of us find ourselves always reaching for the same produce every time you grocery shop. According to the FAO, 75% of the world’s food is generated from only 12 plants and five animal species. But our gut microbiome thrives on diversity! Each variety of plant species (fruit, vegetable, whole grain, legume, herb, spice) has a unique set of beneficial fibers, fiber that is FUEL for your gut microbes. Plant diversity is paramount. Start by adding in 1 new plant variety a week with the overall goal of consuming 30-40 different plant species in a week!
I found these red currants at the grocery store last week and only see them once a year in the middle of August. They are not only beautiful but full of tangy, tart, bright flavor (and fiber)!
