Asparagus Pastry Twirls

Only 1 out of my 3 kids actually likes asparagus but wrap them up in puff pastry and the other 2 became fans! Asparagus is still in season and tastes delicious right now.
Add a dipping sauce of your choice; hollandaise, remoulade or an aioli would work great!

Asparagus Pastry Twirls

Ingredients
  

  • 10-12 Each Asparagus spears Hard ends cut off
  • 1 Tbsp Olive Oil
  • 1 Each Salt and Pepper To taste
  • 1 Each Frozen puff pastry sheet Defrosted
  • 1 Each Egg
  • 1/4 Cup Parmesan or Pecorino Cheese

Instructions
 

  • Drizzle asparagus with olive oil and season with salt and pepper. 
  • Roll out the pastry sheet and cut 1/2 inch ribbons.
  • Wrap each spear with a pastry ribbon, leaving the tip free.
  • Line a baking sheet with parchment paper and place the asparagus on the sheet. 
  • In a small bowl, crack the egg and beat lightly to make an egg wash. 
  • Brush each spear with the egg wash and sprinkle the cheese on top.
  • Bake at 400 for 10 minutes until the puff pastry is puffed and golden brown
