Spring Sugar Snap Pea, Radish and Mint Salad
These Easter Egg Radishes have beautiful shades of red, pink and purple and look stunning next to the bright green snap peas. Radishes, snap peas and mint are some of the easiest plants to grow and a must for every spring garden. Some of my radishes bolted a bit so I added the spicy, edible flowers as garnish.
This salad was delicious as is but I threw in some feta cheese about half way through and it was an excellent addition.

Spring Sugar Snap Pea, Radish and Mint Salad
Ingredients
Salad Ingredients
- 2 Cups Sugar Snap Peas Strings removed and sliced
- 10 Each Radishes Sliced or halved
- 2 Tbsp Mint Chopped
- 2 Oz Feta Cheese (Optional) Crumbled
Dressing Ingredients
- 3 Tbsp Olive Oil
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Lemon Juice
- 1 Clove Garlic Minced
- 1 Each Salt and Pepper to taste
Instructions
- In a large bowl toss salad ingredients together
- In a small bowl whisk together dressing ingredients
- Pour dressing over salad
