These vibrant blossoms are perfectly edible and full of nutrition. Calcium, iron, folate, vitamin C and A. And when you are unsure of what to do with a vegetable my rule of thumb is to throw it on top of a pizza!

Ingredients
  

  • 1 Store Bought or Home Made Pizza Crust
  • 1/2 C Ricotta Cheese
  • 2 Cloves Garlic - minced
  • 1 Tsp Fresh Herbs Chopped - Thyme, Basil or Both
  • 1/4 C Grated Parmesan
  • 8 Squash Blossoms
  • 1 1/2 Tbsp Olive Oil
  • 1 Pinch Flaky Salt

Instructions
 

  • Roll out the pizza dough and spread the ricotta cheese evenly in the middle.
  • Sprinkle on the garlic, herbs and parmesan cheese.
  • Top with the squash blossoms, a drizzle of olive oil and a pinch of flaky salt.
  • Bake at 450 for about 14-15 minutes.
